7 people, 1 tent, rain, s’mores, canoeing, mosquitoes, biking and cooking over an open fire…it was memorable! We started our annual camping/canoeing trip several years ago and they’ve gotten much easier because the kids are older and can help out quite a bit at this point. This year, 4 of the kids were given specific cooking responsibilities. We had….

…The S’mores Elf…

She took her job VERY seriously! She got to make banana s’mores for us this night (1/2 a banana, sliced down the center with graham cracker pieces, cut up marshmallow and a few mini chocolate chips stuffed inside. Wrap it up in foil and let it sit on the coals for a few minutes…they were a hit!)

…The BLT Queen…

Tomatoes and lettuce from the CSA, home made bread and fire-cooked bacon…sooooo good!

…The Breakfast Babe…

She got splattered by bacon grease as she cracked an egg into the pan…can’t win ’em all! You can see how sympathetic her sisters are. 

….and, The Hot Dog King!

He did actually help everyone get their supplies and cook their dogs. He was also available to eat any food left unattended. He’s at that ‘bottomless pit’ stage. 🙂

The kids’ help made these meals pretty easy. They were responsible for packing all the food/supplies needed to make their meals, prepping them to be used and helping the rest of the family cook them. This gave me the time to roast foil packs of veggies and apples and pack the lunches we ate away from the campsite. 

Boiled eggs, grilled chicken, almonds, cheese, carrots, olives (forgot the can opener…made THAT interesting!), apples, crackers, prunes, salami. It was quite the spread and very simple! 

The beauty of the ‘mostly’ real food meals was that we really enjoyed the splurges…thank you S’mores Elf!…and we still felt great at the end of the weekend.
