The sun is out and picnic season is in full swing! If you’re headed to an outing this weekend here a few healthy, fast options to share with friends and family. Bonus: they’re so easy your family can help prep them!

  • Kabobs: Grab some wooden skewers and slide fruit or veggies on. Done! We love fruit because there’s no cooking involved and our kids make quick work of putting them together. Berries, grapes and melons work well. For veggies you can go raw and serve them with a side of guacamole or homemade Ranch OR grill them up quickly.
  • Watermelon: Sometimes I forget the simplest options. Cut up wedges of melon and chill them. Instant summer goodness!
  • Kale Chips: Now, before you tell me your family won’t eat these…try them! I’ve brought these to potlucks for years and we never have left overs. I literally can’t make enough most nights for our family. Make sure you remove the tough center rib and keep them separated on the cookie sheet so they can get crispy. If you have leftovers they store well for a day or 2 on the counter in a ziplock.   • Toothpick Kabobs: Perfect for little hands and grown up snacks. Slide an olive, a cheee cube, a cherry tomato, a basil leaf, salami slice, cucumber slice, etc on (not all at once unless you have ridiculously long toothpicks!). Use what you like and leave off what you don’t. You won’t have leftovers. 🙂
