Wine, smiles, happily working together in a perfectly clean kitchen…that’s what dinner prep looks like in your house, right? 🙂 Yeah, not in ours either! Lately we’ve been so busy I just need something healthy to pop on the table in under 30 minutes. If you’re in the same boat here are a few ideas:

  • Egg Roll In A Bowl: There are a million variations of this because it’s an easy recipe to tweak. Cabbage is the base, but you can add shredded carrots, mushrooms, asparagus, bell peppers, etc. Don’t have sausage? Use ground beef. Don’t want to add meat?   • Fried Rice: With a few simple tweaks this can turn into a healthy meal. Swap white rice out for brown (if you cook the rice in the oven it makes it less sticky and works well in this recipe) and pump up the veggies. Again, use what you have on hand. Onions, mushrooms, peppers, get creative!
