If you plan to eat Mexican food this weekend there are plenty of choices to fit a healthy lifestyle…it’s not all about chips and alcohol. 🙂 In fact, if you’ve ever actually been to Mexico you’ll have found that much of their food is based on home made yumminess and lots of fresh produce! Here are a few ideas to balance out our American versions of their food:

- Fish Tacos. - Or go a bit more authentic and eat fresh! When I got to go to Mexico years ago I was amazed to find that their ‘normal’ meal was eggs, tomatoes, avocado, whatever fresh fruit was in season and maybe a little meat or fish on the side. It was simple & delicious!
