Easter is coming, bringing with it egg hunts, plastic grass…and food! What’s a holiday without a house or church full of people and enough food to feed them 5x over? 🙂
We live hours from our closest family so I’m not used to hosting a lot of people for the holidays, but we’re considering inviting some of the local college students over for an Easter dinner. This led to a Google search for Easter dinner ideas that consisted of a million ways to cook ham and half a million (literally) ways to eat Peeps. There’s nothing wrong with ham and my kids would say there’s nothing wrong with Peeps, but aren’t there a few more menu options? Maybe a few that even include a veggie? Yep, glad you asked! 🙂
- Our church is having a potluck breakfast and I’ll be bringing what I bring to EVERY breakfast because it’s easy and there are never any leftovers. It also avoids most of the ingredients that people tend to be allergic to…Bonus: everyone can eat! http://paleomg.com/easy-breakfast-casserole/
- Another easy, but often overlooked, breakfast/brunch potluck idea is to bring a plate of powerballs. Usually you can make these with what you have on hand. There are a plethora of recipes, but the best are simple with normal ingredients. Hint: if you want to avoid nut butters you can swap in coconut oil. Just mix it all together and pop it in the fridge for 10ish minutes until the oil starts to harden again, making it much easier to roll into balls. - I’m not a ham-hater, but there are other options out there if it’s not your favorite. For a more informal, finger-food type gathering a plate of these meatballs goes fast. - This has become the most requested salad at our family gatherings, which is funny because I have a bunch of avocado-haters and part of what makes this so delicious is a dressing with…avocados! Ok, you get the idea…we have options! And lest you think you’ll be made fun of for bringing the ‘healthy’ food to the gathering, people actually tend to flock to the fresh, colorful dishes in a sea of comfort foods and desserts. The balance of the two is what makes each of them taste sooo good.
